This is a GREAT book to understand this way of dealing with food. The font size is WAY too darn small LOL. But I've read through it many times. I have hams hanging IN my house to dry now and fish curing in my garage fridge. :)

This is a great book!You don't need to live on land to do this, the meat you buy at your local grocery store is a good size to be used for these recipes.I highly recommend this book!

Well done and packed with information. I prefer something a little more technical and less of the "story". Plenty of great information and recipes to make it well worth the cost.
This book explains the art of curing and smoking meats in an easy to understand manner. I have cured and smoked three items from this book and they turned out fantastic.
